Understanding Knife Blade Steels

Blade steel is the most over-discussed and least understood spec in the knife world. Every steel is a compromise between four properties, and no steel maximises all of them. Once you understand the trade-offs, marketing claims become much easier to read.
The four properties that matter
Edge retention is how long the blade stays sharp. Toughness is resistance to chipping and breaking. Corrosion resistance is how well it fights rust. Ease of sharpening is how quickly you can return it to a working edge.
Increasing one usually costs another. High-carbide powder steels hold an edge exceptionally well but chip more easily and take longer to sharpen. Simple carbon steels are tough and easy to sharpen but rust quickly.
Steel families
Carbon steels such as 1095 and 5160 are tough, inexpensive and easy to field sharpen. They require oiling and will patina.
Stainless steels such as AUS-8, 14C28N and 154CM balance corrosion resistance with reasonable edge holding, and dominate the mid-market.
Powder metallurgy steels such as S30V, S35VN, MagnaCut and M390 offer fine grain structure and high edge retention, at a higher price and usually with more demanding sharpening.
Heat treatment matters more than the name
A well heat-treated budget steel outperforms a poorly heat-treated premium steel. Hardness, measured on the Rockwell C scale, is set during heat treat and defines how the steel actually behaves.
Reputable manufacturers publish their target hardness. When they do not, the steel designation alone tells you very little.
Matching steel to use
Wet or coastal environments favour corrosion resistance. Heavy chopping favours toughness. Long cutting sessions with abrasive materials favour edge retention.
If you sharpen frequently and enjoy it, an easy-to-sharpen steel is more satisfying than a super steel that fights your stones.
